Raw Asian Noodles in ‘Peanut’ Sauce

Raw Asian Noodles

This is one is perfect for those nights your body is craving comfort foods!

1 package of Kelp Noodles – rinse and soak in warm water for (20 mins).

‘Peanut’ Sauce:
3 tbs almond or cashew butter
2 tbs tahini
1 garlic clove
2 1/2 tbs lime juice
1 tbs coconut oil
1/2 tbs ginger root
1/2 cup of Dulse (healthy substitute for salt)
2 Dates pitted
Water (or coco water for added flavor)

Blend until smooth. If necessary, add water until desired consistency is reached.

Veggies:
2 carrots
2 green onion stalks, sliced
Baby Bok Choi

Assembly:
Place rinsed noodles and veggies in a large bowl. Toss with desired amount of Peanut Sauce. For the veggies, feel free to add whatever fresh vegetables you want here. For this recipe I sliced baby bok choi, sliced some carrots and added chopped green onion.

Optional: Top with parsley or cilantro.

Kelp noodles are a food made from kelp, an edible brown seaweed that contains high amounts of iodine. Kelp noodles are made with sea vegetables and require no cooking. They can be purchased in Whole Foods or online.

Kelp offers a wide range of health benefits, partly due to their iodine content. For instance, kelp noodles are said to improve thyroid health, promote weight loss, protect against osteoporosis, and enhance heart health. The actual kelp plant contains more than 70 minerals, including potassium, magnesium, iron, calcium and iodine. It contains more than 21 amino acids, plus enzymes, vitamins and trace elements.
