Raw Asian Noodles in ‘Peanut’ Sauce

This is one is perfect for those nights your body is craving comfort foods!
1 package of Kelp Noodles – rinse and soak in warm water for (20 mins).
‘Peanut’ Sauce:
3 tbs almond or cashew butter
2 tbs tahini
1 garlic clove
2 1/2 tbs lime juice
1 tbs coconut oil
1/2 tbs ginger root
1/2 cup of Dulse (healthy substitute for salt)
2 Dates pitted
Water (or coco water for added flavor)
Blend until smooth. If necessary, add water until desired consistency is reached.
Veggies:
2 carrots
2 green onion stalks, sliced
Baby Bok Choi
Assembly:
Place rinsed noodles and veggies in a large bowl. Toss with desired amount of Peanut Sauce. For the veggies, feel free to add whatever fresh vegetables you want here. For this recipe I sliced baby bok choi, sliced some carrots and added chopped green onion.
Optional: Top with parsley or cilantro.
