Apple Boat Crunch Recipe
I’d like to thank the amazing Paul Risse for inspiring this recipe. I saw it on the documentary ‘Average Joe on the Raw’ and have been dying to make it. He said “If someone has never tried raw foods before and you bring them this dish, they’ll ask where to sign up.” And after tasting this, I know he’s absolutely right! I modified his recipe a bit, and it came out ridiculously yummy!
4 apples
½ cup Pecans
½ cup Cashews
1 tbsp Coconut Oil (liquid state)
¼ cup Raisins
2 Dates (pitted)
Cut apples in half and remove core with a spoon. Place pecans, cashews, warmed coconut oil, raisins and dates in food processor and blend until it is almost a nut butter consistency. Scoop nut butter into cored out halved apples and sprinkle your favorite raw topping such as hemp seeds, goji berries or cacao. I sprinkled hemp seeds on this one.
