Raw Cream of Vegetable Soup

Raw Veggie Soup

This delicious, creamy soup is one of my favorite raw dishes. It’s so easy to make and super satisfying!

Ingredients:
• 8-10 medium to large sized carrots
• 2 golden beets or 1 sweet potato
• 6 stalks of celery
• 2 Avocados
• 1 Red bell pepper
• 1 Small bunch of cilantro
• 1 handful of cherry tomatoes

optional
• Cayenne pepper
• ¼ tbsp. Salt

Directions:
Juice the carrots, celery and beets (or sweet potato). Pour the juice into blender and blend with avocados, red bell pepper, salt (I used pink himalayan salt) and a pinch of cayenne pepper. Top with chopped cilantro and cherry tomatoes.

To make it creamier add more avocado.

Serves 2. Enjoy!
