Raw Sundried Tomato Hummus

This creamy raw hummus recipe omits the chickpeas and uses the nutty and super rich flavor of sesame seed tahini instead. It’s perfect as a dip or spread and it’s low-fat and delicious!
Raw Hummus Ingredients
• ½ cup Fresh Lemon Juice
• 3 Tbsp. Raw Sesame Tahini
• 1 1/2 cups of Cucumber or Zucchini (adds body)
• 1/2 cup Sun Dried Tomato
• ½ teaspoon Cumin powder
• ¼ teaspoon Cayenne pepper
• Sliced Green Onion
Serve with slices of Bell Peppers, Carrots, Celery or Raw Crackers.
Directions
Blend the hummus ingredients. Try to place the lemon juice in the blender first, at the bottom of everything, this will make it easier to blend. The mixture should come out thick and creamy. You can add a little bit of olive oil to make it creamier, but I left the olive oil out to make it low fat. You can also thin it out a bit with water. If you make it too thin, add more tahini. Garnish with green onion slices and a pinch of cayenne pepper.
No salt, no garlic
I left out the salt (sun dried tomatoes are salty) and the garlic. Hummus doesn’t need to be a vampire killer! Try it first without the garlic, but if you must, add a clove or two. The green onion for me is enough of a kick.
Serves 1-2.
