Cucumber Sliders

I made this simple meal last night because I didn’t have time to get into a complicated dish, and I was pleasantly surprised at how something so simple can satisfy me so much! It was so flavorful and refreshing.

2 large cucumbers sliced into a total of 16 slices
16 Slices of Tomato (I used Roma and Heirloom Tomatoes)
16 Pieces of Fresh Dill (1/2 inch to 1 inch)
4 Pitted Medjool Dates
1 Lemon
Himalayan Salt (optional)

Place the tomato slice or slices on top of the cucumber slice. Cut the dates into 4 equal pieces each. Place one piece of date and one piece of dill on top. Squeeze a little bit of lemon over each stack, and a pinch of himalayan salt.

Serves 2 people as a meal, 4-6 people as an appetizer
