This deliciousness is so easy to make and super satisfying! It has become a staple breakfast for me specially before workouts. The EFAs in chia break down in your body during your workout and supply it with the perfect fuel for endurance exercise. Add the fruit sugar and you have a wonderful energy boosting meal to get you moving!
1/3 cup chia seeds
1 cup coconut water
1 handful blueberries (or any other berries or raisins)
Pour coconut water over top of chia seeds in a bowl. Stir a little and then wait about 4 minutes ( or until it becomes gel-like). Blend with bananas. Pour in a bowl and add apple bits and blueberries on top of pudding. Sprinkle cinnamon on top.
