Papaya Boats

Here’s a raw dish that you’ll love! Last night I had a big appetite for something juicy and filling, yet I wasn’t in the mood to make anything too complicated. And then this beauty was born! I took these few ingredients I had to make this refreshing colorful meal. The best part was that after eating it, I didn’t crave desert and felt pleasantly fulfilled and light.

Ingredients and Directions:
Chopped Papaya (I used 1 Hawaiian Papaya)
1 Chopped Hass Avocado
1 Cup Cherry Tomatoes Chopped in Half
2 Stalks of Scallions Chopped
1 tsp. of Cayenne Pepper
Juice of 2 Limes (Squeeze over ingredients and toss in a bowl)

place all these ingredients into:

2 Leaves of Red Cabbage

Serves 1-2
