Zucchini Pesto Sliders (Nut Free)

Today my other half and I were craving a savory, hearty meal and wanted to use some of our home grown herbs for dinner. So I mustered up what we had in stock and came up with this amazingly delicious slider-ish concoction! I had to post this recipe because he said this might be one of the best dishes I’ve made so far. So yay! We got a big thumbs up from my picky vegetarian man, and he ate the whole thing! If you knew him, you would know this is big because he rarely ever finishes his plate, so this means the recipe was very successful! 🙂
Ingredients:
4 Zucchinis
Nut Free Pesto:
Fresh Basil (handful)
Fresh Rosemary (1/4 cup)
Fresh Sage (1/4 cup)
1-2 Avocados
Juice of 2 Limes / Lemons
1 Clove of Garlic
Meat
2 Carrots
3/4 cups of Sunflower Seeds / Pumpkin Seeds
1/4 cup of Sundried Tomatoes
1/2 cup Raisins
1 Tbsp. stone ground mustard
1 Tbsp. Miso (optional)
Toppings
Cilantro
Green Onion
Red Habanero / Cayenne Pepper
Directions:
Slice or julienne zucchini into thin flat sheet-like strips. I used a mandolin slicer for this ($15 on Amazon – it’s so awesome, highly recommended!). Blend all pesto ingredients. Put all ingredients for the “Meat” in the processor or chop finely and mix in a bowl. Now that you have it all ready, assembly is easy. Spread the pesto sauce on to a strip of zucchini, then add another strip on top of that to form a sandwich. Then add the meat on top (2nd zucchini strip), and cover with another layer of zucchini. Then add either more meat or more pesto on top and garnish with toppings. Repeat until finished with ingredients.
